As graduation approaches and the days get warmer, this airy dessert is a light and refreshing way to celebrate the summer season. Made primarily with egg whites and sugar and topped with berries and whipped cream, these wispy meringues won’t weigh you down during your summer activities!
Ingredients:
3 egg whites
10 tablespoons of sugar
1 teaspoon of vanilla
2 additional tablespoons of sugar
For toppings- whipped cream and frozen or fresh strawberries
Directions:
Preheat your oven to 250 degrees Fahrenheit. Line a large baking sheet with parchment paper and set aside. Take the 3 egg whites, and when they reach room temperature, beat with an electric mixer until the peaks form and are similar to the texture of whipped cream, but still glistening. Add the first 10 tablespoons of sugar one at a time, mixing thoroughly after each addition. Take away the mixer and add the last 2 tablespoons of sugar and vanilla to the mixture, gently folding it with a spoon to combine the ingredients. For pinkish pavlovas, add 1-2 drops of red food coloring. Using a spoon to gently drop and shape the mixture, make approximately 10 four inch circles on the baking sheet. Bake the meringues for 1 hour, but leave them in the oven for 6 hours after that time has passed, making sure to turn it off. This allows the meringues to properly dry. After this time has passed, either prepare to serve or store them in an airtight container. For toppings, use the amount of whipped cream to your preference and some form of strawberries or other fruit. Enjoy!
