Buttermilk Bread Rolls

Ingredients

  • 1/4th cup unsalted butter
  • 2 tbsp unsalted butter
  • 1 cup buttermilk
  • 2 tbsp instant yeast
  • 1/4th cup honey
  • 1/2 tsp salt
  • 1 egg
  • 4 cups all purpose flour

Directions

Preheat the oven to 400℉. Grease a 9×13 pan for a single batch. Melt the butter in a small saucepan until it reaches 110℉, adding the buttermilk in once it is melted. Add honey and yeast to a stand mixer fitted with the dough hook attachment. Add in the buttermilk mix and stir until combined. Next stir in the egg and salt to be evenly mixed. Add in flour 1/4 cup at a time, until the dough pulls away from the sides of the bowl. The dough mixture will still be sticky at this time. This will take about 3½ cups of flour; the rest can be used later. Flour your surface area and knead the dough before dividing into even sections for the pan. Once the dough is in the pan, cover with either a damp paper towel or plastic wrap and set aside for ten minutes to rise. After the time is up, bake the dough for 10-12 minutes.

Redskin Mashed Potatoes

Ingredients

  • 1 bag red potatoes
  • 2 tbsp butter
  • 1/4 (1/2) cup milk
  • Seasonings done to taste:
    • Salt
    • Pepper
    • Garlic Powder
    • Onion Powder
    • Italian Seasoning

Directions

  • Boil the potatoes in a large pot of water for 15 -20 minutes. Once they are done boiling, drain the water out.
  • Here the decision comes to whether you would like to peel the potatoes or not. Both types of potatoes are common for red potatoes.
  • After you have peeled the potatoes, while they are still warm add ¼ -½ cup milk to help the potatoes mash together.
  • Once they come to the correct consistency, add 2 tbsp of salted butter, as well as salt, pepper, garlic powder, onion powder, and Italian seasoning to your discretion.
  • As they become well incorporated, your potatoes are finished and can be served with your choice of gravy.
