With a return to in-person education and sports for many Linsly teachers and students, time is short for mealtimes and snacking, and eating healthily becomes harder. These nutritious oatmeal cookies can be made in less than half an hour, and are made of ingredients you can easily find around your house. To make them, you will only need:
2 bananas
1 cup oats (any type works)
1/4 cup chopped nuts (I used walnuts)
1/2 teaspoon cinnamon
You will first need to mash the bananas until there are no large lumps. Then, add the cinnamon and nuts and mix. Finally, stir in the oats. Divide the mixture into eight balls with a spoon and place them on a baking sheet. Gently flatten the tops of the balls with the spoon and bake them at 350 degrees Fahrenheit for 15 minutes. The resulting cookies from the ingredients above will only be 90 calories each! If you want a more dessert-like result, chocolate chips or raisins can be added easily. With the base recipe, these cookies are perfect for adding to your breakfast or for a quick snack, in addition to being healthy, gluten-free, and vegan!
